Mackerel Escabeche




Intro

 

Mackerel is a truly remarkable fish, being plentiful around our coast, high in omega 3, and having a fantastic flavour. All our Mackerel are line caught, the most sustainable method of fishing

 

We prepare this dish at the fish deli.

 It is quick and easy and can be served hot or cold.

 

Ingredients

    • mackerel fillets
    • Plain flour
    • Olive oil
    • 2 cloves of garlic
    • 1 red onion
    • 1 small red chilli
    • 1 orange
    • Handful of corriander
    • Either potatoes or mediterranean vegetables to serve with.

Method

1.      Dip the mackerel fillets in a little seasoned plain flour. Shallow fry your mackerel fillets in olive oil until golden and cooked through, keep warm, and set aside.

2.      Gently heat a generous amount of olive oil, add 2 cloves of chopped garlic,one red onion thinly sliced and a small red chilli, deseeded (optional) gently cook.

3.      When the onion is softened add zest and juice of 1 orange and finish with   a good handful of chopped coriander

4.      Add the mackerel fillets to the sauce and let it bubble together for a few minutes.

5.      Serve on a bed of mashed potato or roasted Mediterranean vegetables
